Sheet Pan Chicken Fajitas
Ingredients:
- 1 pound boneless, skinless chicken breasts, sliced into thin strips
- 3 bell peppers (assorted colors), thinly sliced
- 1 large onion, thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- Flour tortillas
- Optional toppings: salsa, guacamole, sour cream, shredded cheese, chopped cilantro, lime wedges
Instructions:
1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or aluminum foil for easy cleanup.
2. In a small bowl, mix together the chili powder, ground cumin, paprika, garlic powder, onion powder, salt, and pepper to create a fajita seasoning.
3. Place the sliced chicken, bell peppers, and onion on the prepared baking sheet.
4. Drizzle the olive oil over the chicken and vegetables, then sprinkle the fajita seasoning evenly over everything. Toss until the chicken and vegetables are evenly coated.
5. Spread the chicken and vegetables out in an even layer on the baking sheet, ensuring they are not overcrowded.
6. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender and slightly caramelized, stirring halfway through cooking.
