Minestrone Soup
Ingredients:
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 zucchini, diced
- 1 cup green beans, trimmed and cut into bite-sized pieces
- 1 can (14 oz) diced tomatoes
- 6 cups vegetable broth
- 1 cup small pasta (such as ditalini or macaroni)
- 1 can (15 oz) cannellini beans, drained and rinsed
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Grated Parmesan cheese for serving
- Fresh basil leaves, chopped, for garnish (optional)
Instructions:
1. Sauté Aromatics:
Heat olive oil in a large pot over medium heat.
Add chopped onion and minced garlic, sauté until fragrant and translucent, about 3-4 minutes.
2. Add Vegetables:
Add diced carrots, celery, zucchini, and green beans to the pot. Sauté for another 5 minutes until vegetables begin to soften.
3. Simmer Soup:
Pour in diced tomatoes and vegetable broth. Bring the soup to a boil, then reduce heat to low and let it simmer for about 15 minutes, allowing the flavors to meld together.
4. Add Pasta and Beans:
5. Add the pasta and cannellini beans to the pot. Cook for an additional 10-12 minutes, or until the pasta is al dente and the vegetables are tender.
