Southern-Style Cooked Greens with Ham Hocks
Ingredients:
- 2 cans (14.5 ounces each) ready-to-serve collard greens
- 2 ham hocks
- 1 teaspoon Cajun seasoning
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 2 cups chicken broth
- Salt and pepper to taste
Instructions:
1. In a large pot or Dutch oven, place the ham hocks and cover them with chicken broth.
2. Bring the broth to a boil over medium-high heat, then reduce the heat to low and let the ham hocks simmer for about 1 hour, or until they are tender and falling off the bone.
3. Once the ham hocks are cooked, remove them from the pot and set them aside to cool slightly.
4. While the ham hocks are cooling, add the ready-to-serve collard greens to the pot with the broth.
5. Season the collard greens with Cajun seasoning, onion powder, and garlic powder. Stir well to combine.
6. Bring the collard greens to a simmer over medium heat, then reduce the heat to low and let them cook for about 30 minutes, stirring occasionally.
7. While the collard greens are simmering, remove the meat from the ham hocks and discard any bones or excess fat. Chop the meat into small pieces.
8. Once the collard greens are tender and flavorful, stir in the chopped ham hock meat.
9. Taste the cooked greens and adjust the seasoning with salt and pepper if needed.
