Mexican Rice


Ingredients:

- 1 cup long-grain white rice

- 1 tablespoon vegetable oil

- 1 small onion, diced

- 2 cloves garlic, minced

- 1 teaspoon Cajun seasoning

- 1/2 teaspoon onion powder

- 1/2 teaspoon garlic powder

- 1 can (14.5 ounces) diced tomatoes, drained

- 1 3/4 cups chicken or vegetable broth

- Salt and pepper to taste

- Chopped fresh cilantro for garnish (optional)


Instructions:

1. Rinse the rice under cold water until the water runs clear. This helps remove excess starch and prevents the rice from becoming sticky when cooked.


2. In a large skillet or saucepan, heat the vegetable oil over medium heat. Add the diced onion and minced garlic, and sauté until they are soft and translucent, about 2-3 minutes.


3. Stir in the Cajun seasoning, onion powder, and garlic powder, and cook for an additional 1 minute, until fragrant.


4. Add the drained diced tomatoes to the skillet, and cook for 2-3 minutes, stirring occasionally.


5. Stir in the rinsed rice, coating it with the onion, garlic, and tomato mixture.


6. Pour in the chicken or vegetable broth, and season with salt and pepper to taste. Stir well to combine.


7. Bring the mixture to a boil, then reduce the heat to low. Cover the skillet with a lid and simmer for 18-20 minutes, or until the rice is tender and the liquid is absorbed.


8. Once the rice is cooked, remove the skillet from the heat and let it sit, covered, for 5 minutes to allow the rice to steam and absorb any remaining liquid.


9. Fluff the rice with a fork to separate the grains. Taste and adjust the seasoning if necessary.


10. Transfer the Cajun Mexican rice to a serving dish and garnish with chopped fresh cilantro, if desired.


11. Serve hot as a delicious side dish to accompany your favorite Mexican-inspired main course.
