Macaroni Salad
Ingredients:
- 8 ounces elbow macaroni
- 6 hard-boiled eggs, peeled and chopped
- 1/2 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- Paprika for garnish
- Chopped fresh parsley for garnish (optional)
Instructions:
1. Cook the elbow macaroni according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool completely.
2. In a large mixing bowl, combine the chopped hard-boiled eggs, mayonnaise, Dijon mustard, finely chopped onion, minced garlic, Cajun seasoning, and onion powder. Mix until well combined.
3. Add the cooled macaroni to the bowl with the egg mixture. Gently toss until the macaroni is evenly coated with the dressing.
4. Season the macaroni salad with salt and pepper to taste, adjusting the seasoning as needed.
5. Transfer the deviled egg macaroni salad to a serving dish.
6. Sprinkle with paprika for garnish and chopped fresh parsley for an extra burst of flavor and color.
