French Onion Beef Stew


Ingredients:

- 1.5 lbs beef stew meat, cubed
- 4 cups beef broth
- 2 cans (10.5 oz each) condensed French onion soup
- 4 medium potatoes, peeled and diced
- 3 carrots, sliced
- 2 stalks celery, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- 2 tablespoons Cajun seasoning
- 2 tablespoons of garlic powder
- 2 tablespoons of onion powder
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil
- 2 tablespoons all-purpose flour (optional, for thickening)

Instructions:

1. In a large skillet, heat olive oil over medium-high heat. Add the beef cubes and cook until browned on all sides, about 5-7 minutes. Transfer the beef to the crockpot.

2. In the same skillet, add a little more oil if needed, then sauté the onion and garlic until softened and fragrant, about 2-3 minutes. Add them to the crockpot.

3. Add the diced potatoes, sliced carrots, chopped celery, dried thyme, Cajun seasoning, garlic powder, onion powder, and dried rosemary to the crockpot.

4. Pour in the beef broth, condensed French onion soup, and Worcestershire sauce. Stir everything together until well combined.

5. Season with salt and pepper to taste. Remember that the French onion soup already has salt, so adjust accordingly.

6. Cover and cook on low heat for 7-8 hours or on high heat for 4-5 hours, or until the beef is tender and the vegetables are cooked through.

7. If you prefer a thicker stew, about 30 minutes before serving, mix the flour with a little water to create a slurry. Stir the slurry into the stew and allow it to cook for another 30 minutes.

8. Once ready, taste and adjust seasoning if necessary. Serve hot and enjoy your delicious and comforting Beef Stew made with French Onion Soup!
