Greek Hummus



Hummus

Ingredients:

- 1 can (15 ounces) chickpeas, drained and rinsed
- 2 tablespoons tahini
- 2 cloves garlic, minced
- 2 tablespoons fresh lemon juice
- 1/4 cup extra virgin olive oil
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- Salt to taste
- Optional toppings: chopped kalamata olives, crumbled feta cheese, chopped fresh parsley, drizzle of olive oil

Instructions:

1. In a food processor, combine the chickpeas, tahini, minced garlic, fresh lemon juice, extra virgin olive oil, ground cumin, paprika, and a pinch of salt.
2. Blend the ingredients until smooth and creamy, scraping down the sides of the bowl as needed.
3. If the hummus is too thick, add a tablespoon of water at a time until you reach your desired consistency.
4. Taste the hummus and adjust the seasoning with additional salt or lemon juice if needed.
5. Transfer the hummus to a serving bowl.
6. If desired, top the hummus with chopped kalamata olives, crumbled feta cheese, chopped fresh parsley, and a drizzle of olive oil.
7. Serve the Greek hummus with pita bread, crackers, fresh vegetables, or use it as a spread or dip for sandwiches and wraps.
