Crispy Home Fries
Ingredients:
- 4 large russet potatoes, scrubbed and diced into small cubes
- 2 tablespoons vegetable oil
- 1 teaspoon Cajun seasoning
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Chopped fresh parsley for garnish (optional)
Instructions:
1. Place the diced potatoes in a microwave-safe bowl. Add 2 tablespoons of water to the bowl. Cover the bowl with a microwave-safe plate or microwave-safe plastic wrap.
2. Microwave the potatoes on high for 5-7 minutes, or until they are slightly tender but not fully cooked through. Check halfway through and stir the potatoes to ensure even cooking.
3. Once the potatoes are partially cooked, carefully drain any excess water from the bowl.
4. Heat the vegetable oil in a large skillet over medium-high heat.
5. Transfer the partially cooked potatoes to the skillet in a single layer. Allow them to cook undisturbed for 3-4 minutes, or until the bottoms are golden brown and crispy.
6. Flip the potatoes with a spatula and continue cooking for an additional 3-4 minutes, or until all sides are crispy and golden brown.
7. Sprinkle the Cajun seasoning, onion powder, and garlic powder evenly over the potatoes. Toss to coat the potatoes evenly with the seasoning.
8. Cook for another 1-2 minutes, stirring occasionally, to allow the spices to toast and infuse into the potatoes.
9. Season with salt and pepper to taste.
10. Transfer the crispy home fries to a serving dish. Garnish with chopped fresh parsley, if desired.
11. Serve hot as a delicious side dish or enjoy them on their own as a flavorful snack!
