Cilantro Lime Rice



Ingredients:

- 1 cup long-grain white rice
- 1 3/4 cups water
- 1 tablespoon olive oil or butter
- 1 clove garlic, minced
- 1/4 teaspoon salt
- Zest of 1 lime
- Juice of 1 lime
- 1/4 cup chopped fresh cilantro leaves

Instructions:

1. Rinse the rice under cold water until the water runs clear. This helps remove excess starch and prevents the rice from becoming too sticky.

2. In a medium saucepan, heat the olive oil or butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

3. Add the rinsed rice to the saucepan and stir to coat the rice with the oil or butter. Cook for an additional 1-2 minutes, stirring occasionally, until the rice starts to toast slightly.

4. Pour in the water and add the salt. Stir well to combine. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked through and the liquid is absorbed.

5. Once the rice is cooked, remove the saucepan from the heat. Fluff the rice with a fork to separate the grains.

6. Add the lime zest, lime juice, and chopped cilantro to the rice. Stir gently to combine and evenly distribute the flavors.

7. Taste and adjust the seasoning if necessary, adding more salt or lime juice according to your preference.

8. Serve the cilantro lime rice as a delicious side dish to accompany your favorite Mexican or Latin-inspired dishes, or enjoy it on its own as a flavorful and aromatic treat!
