Chicken Cordon Bleu
Ingredients:
- 4 boneless, skinless chicken breasts
- 4 slices of ham
- 4 slices of Swiss cheese
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1 cup breadcrumbs
- Salt and pepper to taste
- Toothpicks
For the Sauce:
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup milk
- 1/2 cup shredded Swiss cheese
- Salt and pepper to taste
- Optional: chopped fresh parsley for garnish
Instructions:
1. Preheat your oven to 375°F (190°C). Grease a baking dish and set aside.
2. Place each chicken breast between two sheets of plastic wrap. Use a meat mallet or rolling pin to pound the chicken to an even thickness, about 1/4 inch thick.
3. Season each chicken breast with salt and pepper.
4. Place a slice of ham and a slice of Swiss cheese on top of each chicken breast.
5. Roll up the chicken breasts tightly, securing them with toothpicks to hold them together.
6. Place the flour, beaten eggs, and breadcrumbs in three separate shallow bowls.
7. Dredge each chicken roll first in the flour, then dip it in the beaten eggs, and finally coat it with breadcrumbs, pressing gently to adhere.
8. Place the breaded chicken rolls in the prepared baking dish.
9. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the breadcrumbs are golden brown.
10. While the chicken is baking, prepare the sauce. In a saucepan, melt the butter over medium heat. Add the flour and cook, stirring constantly, for 1-2 minutes to make a roux.
11. Gradually whisk in the milk until smooth. Cook, stirring constantly, until the sauce thickens, about 5 minutes.
12. Stir in the shredded Swiss cheese until melted and smooth. Season with salt and pepper to taste.
13. Once the chicken is done baking, remove the toothpicks and serve hot with the Swiss cheese sauce drizzled on top.
14. Garnish with chopped fresh parsley if desired.
