Cheesy Goulash
Ingredients:
- 1 pound of macaroni pasta
- 1 can (14.5 ounces) diced tomatoes
- 1 tablespoon Cajun seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 medium onion, diced and sautéed
- 2 cups shredded cheddar cheese
- 1 cup milk
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
1. Cook the Macaroni: Bring a large pot of salted water to a boil. Cook the macaroni according to the package instructions until al dente. Drain and set aside.
2. Prepare the Cheese Sauce: In a saucepan, melt the butter over medium heat. Once melted, whisk in the flour to create a roux. Cook for 1-2 minutes until the roux is lightly golden brown.
3. Slowly pour in the milk while whisking continuously to prevent lumps from forming. Cook the mixture until it thickens, about 3-5 minutes.
4. Reduce the heat to low and gradually stir in the shredded cheddar cheese until it melts and the sauce is smooth. Season with salt and pepper to taste. Keep warm over low heat.
5. Prepare the Goulash: In a large skillet or Dutch oven, heat a tablespoon of oil over medium heat. Add the diced onions and sauté until they become translucent and lightly browned, about 5-7 minutes.
6. Stir in the Cajun seasoning, garlic powder, and onion powder, and cook for another minute until fragrant.
7. Add the canned diced tomatoes (undrained) to the skillet along with the cooked macaroni. Stir well to combine and let it simmer for 5-7 minutes to allow the flavors to meld together.
8. Combine the Goulash and Cheese Sauce:** Pour the prepared cheese sauce over the goulash mixture and stir until everything is evenly coated.
9. Serve: Garnish with fresh parsley if desired, and serve hot. Enjoy your comforting and flavorful Cajun goulash with macaroni and cheese!
Optional : For an extra kick of flavor, you can sprinkle some additional Cajun seasoning on top before serving.
