Pinto Beans and Ham Soup
Ingredients:
- 1 pound dried pinto beans, rinsed and sorted
- 1 ham hock
- 8 cups water or chicken broth
- 2 cup diced cooked ham
- 1 bunch green onions, chopped
- 1 teaspoon Cajun seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 bay leaf
- Salt and pepper to taste
- Cooked bacon, diced (for garnish)
- Chopped fresh parsley (optional, for garnish)
Instructions:
1. In a large pot or Dutch oven, combine the rinsed pinto beans, ham hock, and water or chicken broth. Bring to a boil over high heat.
2. Once boiling, reduce the heat to low and let the beans simmer, partially covered, for about 1 to 1 1/2 hours, or until the beans are tender. Stir occasionally and skim off any foam that rises to the surface.
3. Once the beans are tender, add the diced cooked ham, chopped green onions, Cajun seasoning, garlic powder, onion powder, and bay leaf to the pot. Stir well to combine.
4. Continue to simmer the soup for another 30 minutes to allow the flavors to meld together, stirring occasionally.
5. Taste the soup and season with salt and pepper as needed.
6. Remove the ham hock from the pot and discard any skin and bones. Shred any meat from the ham hock and return it to the soup.
7. If desired, remove the bay leaf from the soup before serving.
8. Ladle the hot pinto beans and ham soup into bowls. Garnish each serving with diced cooked bacon and chopped fresh parsley, if using.
9. Serve the soup hot with crusty bread or cornbread on the side for a hearty and satisfying meal.
