Classic Fried Rice

Ingredients:

- 2 cups cooked rice (preferably day-old rice)
- 2 tablespoons vegetable oil
- 2 eggs, lightly beaten
- 2 cloves garlic, minced
- 1 small onion, diced
- 1 cup mixed vegetables (such as peas, carrots, and corn)
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- 1 teaspoon sesame oil
- Salt and pepper to taste
- 2 green onions, chopped (for garnish)
- Sesame seeds (optional, for garnish)

Instructions:

1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat. Add the beaten eggs and scramble until cooked through. Remove the scrambled eggs from the skillet and set aside.

2. In the same skillet, add the remaining tablespoon of vegetable oil. Add minced garlic and diced onion, and sauté until fragrant and onions are translucent.

3. Add the mixed vegetables to the skillet and cook until they are tender, stirring occasionally.

4. Increase the heat to medium-high. Add the cooked rice to the skillet, breaking up any clumps with a spatula. Stir-fry the rice with the vegetables for a few minutes until heated through.

5. Pour the soy sauce and oyster sauce (if using) over the rice mixture. Drizzle with sesame oil. Stir well to evenly coat the rice with the sauces.

6. Add the scrambled eggs back into the skillet with the rice. Stir to combine, breaking up the eggs into smaller pieces.

7. Season the fried rice with salt and pepper to taste. Adjust the seasoning and sauce according to your preference.

8. Continue to cook the fried rice for another 2-3 minutes, allowing the flavors to meld together.

9. Remove the skillet from heat. Garnish the fried rice with chopped green onions and sesame seeds, if desired.

10. Serve hot as a delicious side dish or add cooked chicken, shrimp, or tofu for a complete meal.
